Run the line, and hold a quality record that stands up.
A food plant runs fast and thin. Output matters by the hour and the quality record matters at the audit, and both are usually kept twice: once on the line sheet, once in a spreadsheet typed up after the shift.
Production records what each line actually did as it happens. Output, material used, scrap, rejects and every stop. OEE (overall equipment effectiveness) comes out of those records rather than out of a slide built at month end. A stop with no reason sits in a queue until somebody names it. A wrong figure is voided with a reason, not erased.
Quality holds the defect book. An NCR (non-conformance report) names the reporter, the investigator and the approver, with dates, and the investigator cannot approve their own decision on the material. Calibration keeps the probes and the checkweighers honest and quarantines a failed instrument until QA releases it. HSE (health, safety and environment) can take its exposure hours from the published shift plan instead of an estimate. Traceability, the lot genealogy and the recall trace, is in design. There is a design to walk through and a build to quote. There are no screens.
What hurts today
- Output and stops go on paper, then get typed up after the shift.
- The annual four-hour trace test is a scramble.
- A supplier lot goes bad and nobody can say what it already became.
- Probes come due for calibration when someone remembers to look.
- Defects live in an email thread until the customer complains.
- Safety rates are built on guessed hours.

The rules you work under
Food and beverage plants work under HACCP (hazard analysis and critical control points) and usually a retailer scheme such as BRCGS or IFS, with EU hygiene regulation 852/2004 behind both.
